Kale is the greenest of all greens, the one nutritionally dense vegetable you should have at the ready, but sadly it’s not always available. The simple solution is to start freezing it: buy fresh kale, wash the leaves, chop them roughly, lay them out on a baking sheet and freeze. Once frozen, transfer to a freezer bag and store for a rainy day.
